Have you heard the myth about making Engagement Roast Chicken for a guy if you want him to propose? Well, in my case it was Engagement Breakfast Tortillas that did the trick. That’s right…I’m engaged! The day Luke popped the question started off with this delicious breakfast and ended with the most romantic rooftop proposal and beautiful diamond ring! Oh, and tears. Lots of tears were shed that night.
My proposal meltdown went something like this: Cry cry cry…What’s going on? What are you going? Cry cry cry. This is crazy…this is so crazy. This is SO CRAZY. Cry cry cry. I can’t believe it. I can’t be-LIEVE it. Cry cry cry. It’s so beautiful. I can’t believe it. Cry cry cry. Oh yes…my answer is yes!
Crybaby.

Little did I know at the time that this would be our last meal together as boyfriend-girlfriend. Luke loved it so much, I think I will make it our go-to breakfast when we have guests in town. These are SO easy to make, but the presentation makes them look impressive.
Inside the warm corn tortillas were: Scrambled egg, caramelized onions and peppers, avocado, cheese, salsa and arugula.
A few days after the proposal, we were off to London for Luke’s dad’s 60th birthday. Our news make the trip extra-special and we ended up having a double-celebration. Fun times ahead! Here I am flashing my ring with Luke’s middle brother’s girlfriend, Kate. Isn’t she purty?
Unfortunately, Luke is a bit blog-shy, so I’m not sure if I will ever convince him to make an appearance here. I also haven’t decided how much of my wedding planning I will share either. I’m sure there will be moments of excitement (and stress!) that I’ll need to get out, so we’ll see. Can you be patient with me?
And speaking of patience, I want all of you to start practicing it more in the area of your life that you’re struggling with most–whether it’s with your weight, career, family or love life. I know it’s easier said than done, but as I’ve learned, everything happens just as it’s supposed to, even if those reasons aren’t clear at the time. Don’t rush the process. Some experiences and life lessons may be painful, but if you can accept and work through them, you’ll get there.
I don’t believe that anyone will be denied a TRUE heart’s desire. If you really want something, you’ll get it. Patience. K?
